龍蝦泡在白酒里,短期內不會死還可以吐出沙泥。但如果時間長了就會死了。下面來看一道龍蝦的做法。龍蝦丸子制作所用的原料:龍蝦仁(凍)(大家也可以選擇鮮蝦制作,這樣口感更好,成本相對更高)肥膘肉(肥膘肉是增香的,也可以不放)蔥花、姜末蝦仁的處理:1、把清水倒入蝦仁的盆子內,如果是把龍蝦仁解凍化開,中間多換2次水這樣蝦仁化的快一點,這種冷凍的蝦仁冰比較厚,2斤化開后剩余一斤,化開后的價格在42元左右一斤【500克】。2、把解凍好的蝦仁撈出,用手擠掉多余的水份,然后放在菜墩上面用刀拍破,用刀這樣拍能夠提高效率,把拍破的蝦仁砸成泥。3、把切好的姜末和蔥花放進去一起砸,砸到蝦仁都是比較小的顆粒狀就可以了,從外表看好像已經起膠了,刀翻動比較黏,把蝦仁泥放入盆子內。4、一斤蝦仁加入8克鹽,胡椒粉1克,肥膘肉100克,肥膘肉也可以不放,或者少放,放多了后味會有一點豬肉的香味,然后用手抓勻,并順一個方向攪打上勁。5、攪打到起膠狀態(tài)后加入清水,這里我們一共分了3次加入80克清水,把清水攪打進去之后再加入蛋清,1斤蝦仁共加了2個蛋清,然后再把蛋清攪打到蝦仁里面,還是要攪打上勁,最后再加入15克生粉,把生粉打勻即可。上火制作過程:1、鍋內加水大火加熱,燒開后調小火開始下入蝦丸這樣一直把蝦丸擠完,如果想讓蝦丸更圓可以在手內多擠2次,擠完之后水燒開煮1分鐘左右就成熟了。2、兌制一個碗底:盛器內加入紫菜、蝦皮、鹽、胡椒粉、味精,然后把煮好的蝦丸和湯澆入盛器內,最后撒上香菜即可。
